Master the perfect pan temperature

A cold pan and food sticks. Too hot and it burns. All you need is the right heat zone, and there is a simple test for it.

What the Leidenfrost effect is

  • A drop of water glides across the surface instead of evaporating instantly.
  • That means the pan is at the ideal cooking temperature.

Preheating the pan

  • Put the pan on medium heat.
  • Wait 2-3 minutes.
  • Test it with a few drops of water.

Reading the signs

  • Too cold: the water sits flat and evaporates slowly.
  • Too hot: the water bursts into steam at once.
  • Just right: the water beads and glides.

Adding the oil

  • Once the pan passes the test, add the oil.
  • The oil will shimmer, not smoke.
  • Now the pan is ready for food.
